Cheese...the best thing since...well, Cheese

Our fresh batch of cheese arrives this week, and there are some newbies on the list. So go pick up a baguette, and check out our online store to see what will be available to order.


For those of you who knew me when I started Laliberté Cheese Co, over 2 years ago (wow!), you'll know that I came into this biz with nothing but a love of cheese. No retail experience, no cheese background knowledge, just a desire for a consistent supply of the types of cheese that I enjoy. This has been a fairly selfish endeavour. And since launching, I've actually brought in 180 different cheeses! It seems like an unbelievably large number, but I triple checked and it's true!


The last few months have been about reflecting on the future of Laliberté Cheese Co (don't worry, I'm not going anywhere!) and I realized that I needed to start getting serious about my education. So I'm going back to school! Sort of, but not really. Yes, I will be pursuing a more formal cheese education, but not as a full-time student, and really only as a weekend warrior, via the internet. School but not school. As well, I will be working on my wine knowledge with the help of some new and truly talented and knowledgeable friends who are so generously willing to share their experience and excellent taste in wine in exchange for eating cheese together. Friends with cheese and friends with wine....the ultimate pairing!


So what's new this month! Well, if you've paid attention to social media, you will already know that we now have a second location where you can find our cheese! Beaufort Vineyard & Estate Winery has chosen us to provide tasty nibbles for their discerning clients. We will maintain a stocked fridge in their tasting room with a rotating selection of European & Canadian cheeses as well as Oyama sausage. No need to bring your own picnic, they will have you covered. Also available will be crackers, olives, jams and other tidbits that will allow you to put together a beautiful spread to enjoy out on their lawn. Everything is packaged to go, so you can come in to grab a few cheeses for the road or settle in for a bit more of a formal visit at the vineyard.

Cheese

Our cheese list this month has something for everyone! We will have a rotating selection at both Beaufort Vineyard and Estate Winery and Compass General Store & Kitchen in Comox.


A couple of new cheeses on our lists have been specifically requested at some point. I haven't tried either of them but I am positive they will be delicious.


First up is Tomme aux Fleurs. What a beautiful cheese! An Austrian cheese made with thermalized cow's milk, it has an initial 6 month maturation period before undergoing a 2nd ripening after having the rind covered in flowers. The aromas of the flowers transfers to the cheese itself, making it both tasty and visually stunning.

Slightly nutty and salty, with a hint of alpine flowers. Enjoy with a fruity wine, such as a chardonnay.


And Irish Cashel Blue...well the name says it all. It's Irish and it's Blue!

Made with pasteurized milk, this cheese is handmade...literally...as the curd grains are mixed by hand. An aware winning cheese, it is fragrant, a bit grainy but also creamy (how's that for a mixed message?), and generally tastes like a blue! Enjoy this one with an IPA type bear or a sweet white wine such as a Sauternes.
