A soft cheese made with whole, raw goat's milk. During ripening it is wrapped in a leaf of chestnut, sycamore or plane. The texture varies from soft, runny to firm with age. And the flavour intensifies as itmatures. 
Pair with a glass of Champagne or single-malt whiskey.
